Crispy Zucchini

he best Crispy Zucchini you'll ever have just in 2 to 3 minutes! The lovely pieces of Zucchini marinated with aromatic spices then coated and fried. This is a very simple appetizer, if you never like Zucchini before, try this one you will love it. Just keep the temperature right while you frying and enjoy.

Serves 3 to 4 as a snack

Cooking time and process 15 minutes


  • 300g of Zucchini (18 to 21 Crispy Zucchini)


For the marinate Zucchini

  • 1 Clove of Garlic

  • ½ tsp of dried Rosemary

  • ½ tsp of dried Oregano

  • 1 tbsp of Olive Oil

  • Pinch of Salt and Pepper or at your taste


For the coating

  • 150g of all purpose Flour

  • 4 egg yolks with pinch of Salt and Pepper

  • 150g Bread Crumble

  • 300ml of Frying Oil (Peanut/Corn/Vegetable oil)


How to make 

I use a semi-ripe Zucchini and chop in the half inch circles. Put it in the bowl and add 1/2tsp of Rosemary, ½ tsp of Oregano, 1tsp of olive oil and pinch of Salt and Pepper then mix it well and keep it aside for 10 minutes to observe the all aroma from the spices.

Meanwhile prepare the coating, 4 eggs yolk (separate the yolk from the white like I do) add 1tbsp of water to not make a thin batter, pinch of salt and pepper in the yolk then beat it for a few seconds just to combine it well.

150g of all purpose flour and 150g of bread crumble on the plate.

After 10 minutes, coat the Zucchini with flour, pad it several times and shake it. Use your other hand to deep it well in the egg yolk and shake it again. And again with your first hand coat it with bread crumb very well.

And repeat the process to all slices. Make sure you keep using your hands in this order to keep a way the liquids from flour.
