Pork Fried Rice with Vegetables

Pork Fried rice with Vegetables is one of my favorite comfort dish, it’s very easy to make without much effort just follow my friendly recipe.

I used Aromatic Basmati Rice, Pork Belly without bone and skin and a lots of lovely vegetables all cooked without much grease. Rice gets so loosen and combines with all that lovely and fragrant ingredients. Give it a try, you will love it.

Serves 3 to 4

Cooking time 15 minutes after preparing all ingredients

 

Ingredients

  • 2 cup of Basmati rice (200g rice cooked)

  • 200g boneless and skinless Pork Belly

Vegetables

  • ½ cup of chopped Pepper (100g)

  • 2 cup of finely chopped Broccoli (200g)

  • ½ cup of Green Peas (50g)

  • 4 stems Spring Onion

 

Sauce

  • 1 tbsp of sweet Soya Sauce

  • 3 tbsp of light Soya Sauce

  • 1 tbsp of Sriracha Chili Sauce

 

Fragrant Ingredients

  • 3 cloves of Garlic

  • 1 tsp of Ginger

  • ½ cup of Onion (half onion)

  • 3 Fresh Chiles chopped finely (Optional)

 

2 tbsp of cooking oil

  • ½ tsp of Sesame oil (Optional)

  • 2 Eggs batter with pinch of salt and couple of drops of Sesame oil

  • Salt at your taste

 

How to make it

First chop and mince all ingredients in small cubes.

Heat a Pan or Wok, add 2 tbsp of cooking oil, and let oil to be hot then add minced Garlic, Ginger, Chilies, let it to be infuse for 30 seconds then add Onion, fry it until 30 seconds to 1 minutes then keep it aside in the Pan. Then add the chopped meat, fry it around 5 to 6 minutes or until it becomes golden in color. Then mix it with the rest. Then add the Broccoli and Pepper, combine it with all then let it cook for 1 to 2 minutes. Add Peas and keep spring onion for later. Mix all together, you can see all its beautiful colors. Let it cook 1 or 2 minutes but still crunchy. Make a Well in the middle for the eggs, add eggs and just scramble it, don’t mix it with the vegetables just yet. After 30 seconds mix all together.

Add rice and the sauce and mix it all together before the sauce dries. Then fry it for 2 minutes and add spring onion. Mix it well and cook for 1 minute then turn off the Gas and add ½ tsp of Sesame oil if you like, mix it well then taste if the salt is fine or not for you. It should be perfect! You have done it, enjoy!
