Big Tomato, 4 Eggs and Instant Noodles for 2 meals

Very easy and time saving comfort dish. I cook basic instant noodles that you can get anywhere in your supermarket. I made the gravy first with a large Tomato and Eggs, and with a lot of minced garlic. This is a very delicious and quick dish; I hope you like it. Check out the video until the end to find out how. Cooking time 20 minutes

 

Serves 2

 

Ingredients

2 packs of instant Noodles (most of them come with a small pack of masala inside)

A big sized Tomato (250g)

4 Eggs

4 cloves Garlic minced

½ inch Ginger minced

1 mild Spicy Fresh Chili sliced

1/2 tsp Chili Flakes

1 tbsp Soya Sauce

1 tbsp Corn starch

1 tsp Salt or necessary

A few pinches of Black Pepper

5 tbsp Olive Oil

Some water

 

How to make:

Prepare all the ingredients above

  1. Give several cuts on the back of the tomato, not too deep, and place it in a large bowl, then pour boiling hot water and wait for 10 minutes.

  2. Meanwhile mince the garlic, ginger and the chili in your preferable cut.

  3. After the Tomato’s skin gets loose, remove from the water, peel the skin off and chop it up finely, and set aside.

  4. Crack the Eggs and put into a bowl, join in a few pinches of Salt and Black pepper, batter them well.

  5. Then heat a pan, add in 3 tbsp of Oil. When it gets hot then put the batter Eggs and mix it evenly to scramble and set aside.

  6. Put the Oil in the same pan and add in the minced Garlic, Ginger, the chopped red Chili and Chili flakes and mix them until its fragrant and goldish, in around 30 seconds.

  7. Next, add in tomato, mix it very well and cook it for 2 minutes. After, add in Salt and the Soya sauce, mix it and let it cook for 5 minutes. After 5 minutes if the tomato is not cooked enough, then smash with the back of the ladle.

  8. When the Tomato becomes smoother then add in scramble eggs, combine with the tomato well.

  9. Now, mix Corn starch with a bit of water until it becomes one then join with the Eggs and Tomato following with more water to make it gravy, around a cup. Combine them very well and bring it up to boil.

  10. Next, put in the Masala from the Noodles packet, mix them well and let it boil until the gravy becomes slightly think then it is done.

  11. Boil the noodles for 3 minutes and serve with the Tomato and Eggs gravy.

If you like garnish with spring coriander. Before eating mix well and enjoy! Stay well!
