Aromatic Roasted Sweet and Russet Potatoes 🥔

An amazing and gorgeous looking side dish which is very easy to make. Here I marinated half boiled Sweet and Russet Potatoes with roasted cumin and crushed coriander, dried Rosemary, garlic and other lovely fragrant ingredients and finishing cooking in the Oven. It is one of the best side dishes, give it a try.

 

Cooking time 1 hour and 10 minutes

 

Serves 3 to 4 portions as a side dish

 

Ingredients

1 big size Sweet Potato

8 Medium size Russet Potatoes (700gr)

Pinch of salt and enough water to clean and boil the Potatoes

 

To Marinate Ingredients for Boiled Potatoes
3 cloves of crushed Garlic with skin
2 Bay leaves

1 tsp of roasted and grinded Cumin and Coriander Powder
1 tsp of dried Rosemary
1/2 tsp of sweet Paprika Powder
1/ 2 tsp of Sea Salt
1/2 tsp of Black Pepper
2 tbsp of Olive Oil
Enough Butter to put in the Baking paper
 

How to make it

First clean the potatoes with cold water then chop it to make even size which helps to cook evenly.

Into a pot add enough cold water, Potatoes and a pinch of salt. Bring it to the gas with lid on, let it boils. After it boils let it cook for 15 minutes in medium heat. Just cook until the outside is a bit soft but inside is still uncooked.

After 15 minutes remove the pot from the gas and drain it and let potatoes cool down to make it easy to peel.

While potatoes are cooling down, prepare ½ tsp of Cumin and ½ tsp of Coriander seeds to roast and crush.

Into the a small pan with medium heat, add seeds, shake it to fry it evenly until seeds becomes brown, add it to a Mortar after it becomes brown, with a pestle grind it roughly to explode its flavor.

Next potatoes are cool, let's peel all with a small knife. If you have a big size potatoes chop it into half. Now I´m going to marinate the potatoes with all above marinate ingredients.

With a zip locked bag (if you don't have it use normal plastic bag) fold it until half from inside out, into it put all marinate ingredients. Mix it very well to combine next add all potatoes little by little to not to smash. After lock the zip or tie your plastic bag then mix well slowly to combine all lovely spices into Potatoes, don´t be hard on it, it can break because potatoes are already half cooked.

Next remove all air out from inside the bag, lock it and put it in refrigerator for at least an hour or overnight to absorb all goodies in. After an hour go ahead and preheat the oven in 180c or 250f.

Next prepare a baking tray with baking paper, spread butter on it to prevent burning.

Put all marinated potatoes on the tray, do not make it too crowded and that crushed garlic.

Sprinkle all that lovely sauce on top of potatoes to not waste.

Now ready to go into the preheated Oven for 40 minutes.

In the first 20 minutes or when the upper part becomes brown a bit flip it over to cook and brown evenly.

Remember cooking time depends on your oven temperature so keep an eye until all potatoes becomes slightly crispy outside or you can take it out one and check it, easy.

Now second 20 minutes passed all potatoes are done beautifully so remove them out from the oven and transfer to serving plate straight away. This dish is great to serve while it still hot. Enjoy!
