Cod Fish in Olive Oil 🐟


Bacalhau à Lagareiro is one of the best known Cod dishes in traditional Portuguese cuisine. Cod loin is roasted with a generous amount of olive oil and potatoes as well as with aromatic ingredients. This is a very simple and delicious recipe and I even made it simpler.

Cooking time 20 minutes after preparing the all ingredients

Serves 2

Ingredients

350g of unsalted Cod fish piece

1 tbsp of olive oil to seal the Cod

10 small baby size of Russet Potatoes

1 tsp of Salt to boil the Potatoes

2 cups of water

2 tbsp of chopped Garlics

150 ml of aromatic Olive Oil (normal olive oil also good).

A few stems of Parsley with stems

2 Bay Leaves

A few stems of Rosemary

Black Pepper on your taste

How to make

  1. Prepare all ingredients above (to unsalt the dried salted Cod. Soak in the cold water for two days, changing water every three to 4 hours and dry it)

  2. First boil the potatoes in a small pot with 1 tsp of salt around 15 minutes or until it becomes soft

  3. Meanwhile seal the Cod, into hot pan add 1 tbsp of olive oil, shake the pan to coat it evenly. When oil gets hot add the cod skin side up and let it fry until it gets Golden in color or around 3 to 4 minutes. It helps to enhance the flavour and makes the upper part crispy. After take it out and put it into the baking tray that you are going to use to roast all ingredients

  4. Now you can go ahead and preheat the oven in 190 centigrades, 375 Fahrenheit

  5. After 15 minutes check the potatoes with a fork, just poke it if the fork is going throw easily then potatoes are ready, remove from it, drain it and let it cool slightly down until we can handle it

  6. Now punch the potatoes and add in the baking try with the Cod. Next season it with black pepper on your taste, we don´t need salt because potatoes and Cod already have it. Chopped garlic. Bay leaves break and add, a few fresh stems of Rosemary and parsley stems and finally aromatic olive oil be really generous, if you don´t have aromatic olive oil then you can use normal one.

  7. Let’s put into the preheated oven for around 15 to 20 minutes until it becomes a slightly caramelized.

  8. After take it out. Transfer to a serving plate and garnish with rosemary and parsley and finally cooked olive oil by this time it looks amazing and smells so good! Enjoy!

Note: You can switch this dish to vegetarian with Tofu, Mushrooms, Taro or vegetables that you prefer and add salt to your taste.
