Scramble eggs with Farinheira, in Portuguese Ovos Mexidos com Farinheira. Farinheira is a Portuguese Smoked Sausage made mainly from wheat flour, pork fat and seasoning. But I'm using fresh and meaty Farinheira. This is one of the typical Portuguese dish served on bread or toast as a starter. It is going to be delicious and so creamy. Let´s make it and enjoy.
Cooking time 8 to 10 minutes after preparing the all ingredients
Serves 2 to 3 as a Snacks
1 Farinheira (Portuguese Smoked Sausages)
Half cup of fresh green Peas (Optional)
½ finely chopped Onion
1 and 1/2 tbsp of Olive oil
A few drops of Piri Piri Sauce (Optional)
2 tbsp of chopped Garlics
1 to 2 tbsp of spring Coriander chopped
1 Bay Leaves
Salt and Black Pepper on your taste
How to make
After you have all the ingredints above:
First prepare the farinheira just cut on the skin of the sausage all the way through lengthwise and take the skin out. Then loosen it with a small knife and set aside.
Batter 5 whole eggs very well and add in the chopped coriander and a few drops of Piri Piri for the heat. Mix it very well to combine and set aside.
Next heat the Pan on medium high heat. After the pan gets a bit hot then add 1 and half tbsp of olive oil. Let the oil be hot but not too much. Add the Onions and the bay leaf and stir it until the onion becomes translusive.
After add in the Farinheira. Mix it very well to separate it and fry it a minute or two.
Now make the space in one side in the Pan and add in the Peas to fry on direct heat of the pan to make it crispy. Mix it very well a minute.
Then mix with the rest very well. Let it fry for around 3 to 4 minutes or until it gets crispy and brown and remove the bay leaf if you like.
Now turn the heat to the lowest possible or turn off and move the pan to a cold burner. Now add in the battered eggs in to two portions, add the first portion and mix it very well and keep mixing around 20 seconds.
Now add the second portion and mix very well to combine. Now if you see egg is still runny then bring it to lowest heat on the gas than keep mixing for around 20 seconds or less to bring it up to your preferable scramble consistency.
Now it looks so silky and awesome, at this point we are done.
Add in the salt to your taste and mix it then turn the heat off and add in the black pepper and mix it very well and taste if seasoning is perfect than you are done if not than season on your taste.
You can serve with normal bread or toast, Pickles, or Olives and Garnish with a bit of fresh coriander and black pepper and enjoy..
