Aromatic Stew Braised Pork Belly with lots of vegetables, very easy to make it at home. Lovely spices gives full flavor. A lots of vegetables cooked in fat of the meat which is help vegetables to bring another level of the taste.

For the seasoning Paste
Rest of the Ingredients
2 medium size of Tomatoes
1 medium size of Red Onion
1tbsp of Lemon juice
1tbsp of Mustard oil (any other cooking oil will work)
1 Bay leaf
½ tsp of Cumin seeds
1 small Cinnamon sticks
1 handful of Spring Coriander
½ tsp of Turmeric Powder
1tsp of red Chili Powder (Optional)
800ml of Water
Salt at your taste
How to make
First clean the Pork belly by using a trick– run the back of the chopping knife on the skin side of the meat to remove the access dirt. To remove the hair, heat the pan and add the cut of the meat with the skin side down and move it for a few seconds. Remove the access fat from on top of the meat. Then boil the meat 4 to 6 minutes with a bit of Lemon Juice to remove the bad smell. Your meat is clean.
3 cloves of garlic and 1 tsp of ginger chop randomly, put it into a mortar or blender to make a paste then put it into the bowl and add 1/2tsp of cumin powder, 1tsp of coriander powder, ¼ Garam masala and 2tbsp of water. Mix it well, keep it aside.
Dice all ingredients in cubes. And also meat same in size cubes to cook evenly.
Start cooking heat the pan in medium add oil, let it to be hot then add the Cumin seeds, Cinnamon, Cardamom and cloves and let it to be infused then add meat, let it to be seal and cook it until it gets golden in color almost 7 to 8 minutes.
Turn heat to low, add Chili powder and turmeric powder, mix it well it gives nice color and flavor, add bay leaf and seasoning paste, mix it well, cook it for 30 seconds.
Add salt at your taste and turn heat to medium and add Chayote, Carrot and Onion, mix it well, add 800 ml of water, mix it well then lead on and cook it for 20 minutes.
After add capsicum and green chilies, mix it well and cook it for 5 minutes. After 5 minutes add the tomatoes and cook it for 5 more minutes then mix it well, add lemon juice it helps to cut the fat and adds tangy flavor to it. Then spring coriander, mix it well , now we are done! Enjoy…
