Spicy Quail with Basil

This is a very spicy minced quail with fresh basil with Chinese and Thai style seasoning sauce.

 

Time to cook 15 to 20 minutes

 

Ingredients

  • 2 quail minced with bone

  • 1 handful of basil

  • ½ small size of red Capsicum

  • ½ small size of yellow Capsicum

  • Sauce for seasoning

  • 1 tsp red curry paste

  • 1tbsp soya sauce

  • 1tsp fish sauce

  • 1 tbsp sweet syrup or honey or sugar

  • 1tsp cheese rice wine

 

To grand

  • ½ tsp Coriander seeds (Roasted)

  • 2 red chilies

  • 1 stem Lemon grass

  • 3 cloves of Garlic

  • 1tsp Ginger

 

Garnish

  • 1tsp roasted sesame oil

  • ½ roasted sesame seeds for the garnish

  • Salt at your taste

  • 2 dry red chilies

  • 2tbsp cooking oil

 

How to make

Mix all ingredients above to grand to mortar and make the paste then mix it with other seasoning ingredients, mix it well and keep it aside. Chop the capsicums in 2 inch strips

Next minced the quail with bone by using knife. Heat the pan or Wok, add 1 tbsp of oil and make it hot, add minced quail and fry until it cooks thoroughly, take it out on the plate and keep it aside.

To the same Pan add 1tbsp of oil, let it to be hot, add the dry chilies, fry couple of second, add all paste and cook for 1 minutes then add the capsicum and mix well and add the precooked minced meat then mix it well and cook until liquid dries and spices nicely coated to the meat, add basil, mix well and you are done. Here you can taste if you need more salt can add. Turn off gas, take it to the plate and season with sesame oil and seeds. Enjoy!
