How to cook Chicken for Family Nepali style

The dish I cook today brings back my beautiful childhood memories, my mum used to cook to feed us 6 children while we were all together and still she cooks in our family gathering. Full of love and so delicious. I hope you cook as well to your family and share your love and affections. It is very easy dish and I made it easier to follow. Cooking time take 40 to 50 minutes

 

Serves for big family gathering around 15 to 20 people with side dishes

 

Ingredients

3 Kg Chicken

4 tbsp cooking Oil

3 Cinnamon leaves

½ tsp Cumin seeds

1 tsp Turmeric powder

½ tsp Garam masala

2 tbsp chopped spring Coriander leaves

Ingredients to dry Roast

3 small Cinnamon Sticks

2 tbsp Coriander Seeds

1 & half tbsp Cumin Seeds

1 tsp Black Pepper

7 green Cardamom

8 Cloves

1 Star Anis

1 & half large size Onion diced

2 large size Tomatoes diced

A handful of Coriander Stems

5 red spicy Chilies or to your taste

8 cloves Garlic

2-inch Ginger

 

How to make

Prepare all the ingredients above

  1. In a pan dry roast, first the whole dry spices until it changes the color then Garlic, Ginger, Chilies and Spring Coriander stems dry roast a minute, add in Onion, roast it around 5 minutes until it caramelized. Finally add in chopped tomatoes, cook it until it gets soft. Let it cool down and blend it with a cup of water to make a fine sauce. Keep it aside.

  2. Heat a large pot on medium high heat with 4 tbsp cooking oil. As soon as the Oil gets hot add in ½ tsp cumin seeds and 3 Cinnamon or Bay leaves. After a few seconds add in the meat and don't mix it around 4 minutes.

  3. After four minutes combine it very well, you will see the bottom part of some pieces of the meat is sealed, next fry it until its all sealed beautifully.

  4. Add in 1 tsp of Turmeric powder and salt to your taste, combine them very well.

  5. Add in all blended spices and combine well. Reduce heat to medium low, lid on and cook it around 10 minutes.

  6. In 10 minutes lid off, combine and turn heat up to medium. Add in 2 cups of water or as you prefer and combine let it boil and cook it for 2 minutes.

  7. Then add in ½ tsp Garam Masala and Spring Coriander and combine them very well, cook a minute and turn of the heat. Now your delicious for your family is done, you can garnish with chopped spring coriander and some red fresh chilies and enjoy.
