These Granola Christmas Cookies are a festive, wholesome, and beautifully handmade Christmas treat. Made with roasted oats, nuts, dried fruits, honey, and peanut butter, they are chewy, rich, and naturally sweet. Shaped using Christmas cookie cutters and finished with a dusting of icing sugar, these cookies make perfect edible gifts for family and friends during the holiday season.
This recipe takes a little time, but every step is worth it when you want to create something special, thoughtful, and homemade for Christmas.
Ingredients
Granola Base
300 g rolled oats
30 g pine nuts
70 g laminated almonds (or whole almonds)
60 g pecans or walnuts
30 g yellow raisins
60 g dehydrated cranberries
60 g crystallised mixed fruits
30 g crystallised ginger candy
Liquid Base
300 ml honey
125 ml peanut butter (pure, no added sugar)
1½ tsp vanilla extract
1 tsp cinnamon powder
½ tsp table salt
For finishing
Icing sugar, for dusting
Method
1. Roast the oats and nuts
Preheat the oven to 160°C.
Coarsely chop the pecans or walnuts. Roughly chop the laminated or whole almonds, and lightly run a knife over the pine nuts just to break them slightly.
Add the rolled oats and all the chopped nuts to a baking tray and spread them evenly.
Roast in the preheated oven for 8–10 minutes. After 5 minutes, remove the tray, mix everything well, and return it to the oven for another 2–3 minutes.
Once roasted, remove from the oven and set aside to cool.
2. Prepare the dried fruits
Finely chop the crystallised mixed fruits so they are similar in size to the other ingredients. This helps the granola stay compact when shaping.
Chop the crystallised ginger candy in the same way.
Leave the cranberries and raisins whole.
3. Make the liquid base
Place a large deep pan over medium heat. Add the honey and peanut butter, making sure the peanut butter has no added sugar.
Stir continuously as the mixture heats until it becomes smooth and evenly combined. Using a little more honey and peanut butter helps create a dense, compact granola that holds its shape. This also makes the cookies richer and glossier—perfect for a festive treat.
Once the mixture begins to gently simmer, add the vanilla extract, cinnamon powder, and salt. Mix well so all the flavours are evenly incorporated.
Turn off the heat and remove the pan.
4. Combine the granola
Add the roasted oats and nuts to the liquid base, followed by the cranberries, chopped crystallised fruits, ginger candy, and yellow raisins.
Mix thoroughly until all the ingredients are evenly coated.
5. Bake the granola slab
Line a baking tray with parchment paper. Transfer the granola mixture onto the tray and use a spatula to spread it evenly. Press it down firmly so it is compact and flat.
Bake in the preheated oven at 160°C for 15–20 minutes.
Remove from the oven once baked and allow it to cool slightly—just until it is warm enough to handle.
6. Shape the cookies
While the granola is still warm, prepare to shape the cookies. Lightly grease your hands and the Christmas-themed cookie cutters.
Place a cookie cutter (such as a Christmas tree) over the baked granola and press down firmly to cut the shape. Gently press the granola inside the cutter so it becomes compact and solid.
Carefully lift the cutter away from the surrounding granola and gently push the cookie out using your fingers.
Work quickly, as the granola becomes harder to shape once it cools completely.
Alternative method: Place the cookie cutter directly on a flat surface, add a portion of warm granola inside, press evenly to compact, and gently remove the cutter.
Repeat until all the granola is shaped.
7. Finish and decorate
Transfer the shaped cookies onto parchment paper. Dust lightly with icing sugar to create a snowy, festive finish.
You can create a variety of shapes such as Christmas trees, stars, gingerbread figures, bells, and candy shapes.
