Piri Piri Chicken Authentic Portuguese Style 🌶️


Easy and delicious recipe Piri Piri Chicken which is very popular in Portugal and outside. It is very easy to make than it seems. In this recipe I made the Piri Piri Sauce only with the five ingredients which is the typical Piri Piri from Portugal, the mixture of all ingredients make the Chicken amazingly juicy, make it looks gorgeous and mouth watering. Serves 4

Ingredients

1 (1.5kg) whole Chicken

1 tbsp of Salt (on your taste)

2 to 3 tbsp of Olive Oil

Coriander for Garnish as you wish

For the Piri Piri Sauce

80g of fresh Red Chilies ( use on your taste only the Red ones)

3 to 4 cloves of garlic

1 tsp of sweet Paprika

½ (2 tbsp) Lemon Juice

150ml of Olive Oil

How to make

  1. First prepare the all ingredients above.

  2. Cut Chilies and remove the seeds out if you can´t eat very spicy, you can use it less according to your taste. 3 to 4 cloves of Garlic, peel and chop randomly. Add into the blender. 1 tsp of sweet Paprika powder, half Lemon juice around 2 to 3 tbsp and finally olive oil, add sufficient to cover the all chilies, I added around 150mililiter in to the blender. After we added into the blender, blend it all very well until it combine and becomes fine sauce and put it into a bowl, set aside.

  3. Next clean the Chicken if you have a whole chicken, open it between of the breasts with the kitchen scissor. If you can´t do it ask your butcher to do it for you. Remove the excess fat and water with a pepper towel if it still has water, to make it dry.

  4. Now heat a griller or Pan in medium high heat , add olive oil to toast the Chicken skin before roasting it in the Oven. After oil is hot add the Chicken, breast side down first on the griller.

  5. Here we are trying to replicate the beautiful color and crispier skin. It takes around 4 to 5 minutes on each side. Meanwhile turn on Oven in 190 degree centigrade (375 fahrenheit) to make it very hot.

  6. After chicken becomes crispy and beautiful color. Flip it over and toast until it becomes golden brown color. Meanwhile prepare the tray with salt and 1 to 3 tbsp of olive oil.

  7. After the Chicken is toasted put in the tray and sprinkle it with salt very well both sides, be generous because we haven't use any salt yet, and brush the Piri Piri Sauce both sides.

  8. Now put it into the preheated oven for around 30 minutes skin side down to not to burn the skin better.

  9. After 30 minutes take out the Chicken and again brush rest of the sauce on the Chicken both sides. Actually I´m using all sauce, it makes the chicken juicy and the left over cooked sauce is going to be delicious but if you want to make it a bit dry use only half of the sauce. Again, put it in to the Oven skin side up around 35 to 40 minutes to make it more crispier skin.

  10. After 40 minutes, the chicken is done it took around 1 hour and 10 minutes to cook in total. Let it rest for around 5 minutes to settle this beautiful flavors down.

  11. After 5 minutes transfer chicken to the chopping board and reserve the lovely sauce in to a bowl from the tray.

  12. Chop it up into 8 pieces for 4 portions and put into the serving plate as you wish.

  13. And add a bit spring coriander to garnish and a bit sauce on top, I really recommend you to do it, it makes it more juicer.

  14. Enjoy!

This sauce has so much flavor if you don´t finish all keep in the jar in the fridge then we can use for months.

Note: I´m using a blender to blend the Piri Piri Sauce, it is easy so. If you are using a Mortar and pastle, pastle all dried ingredients first, make it like a paste then add olive oil and mix it very well to combine. Then your Piri Piri Sauce is going to be ready.

Note: To check if the chicken is cooked or not, poke it with the skewer in the thicker part of the chicken before taking out from the Oven if the water runs clear then chicken is cooked.
