Cooking time 30 minutes

Serves 3 to 4

Ingredients

800 grams cut Potato in large size Matchsticks

800 mls vegetable Oil

To boil the Potatoes

1.5 litres Water

1 tsp Salt

1 tbsp whate Sugar

0.5 tsp Baking powder

To coat the boiled Potatoes to fry

0.5 cup Cornstarch

1/4 tsp red Chili powder or use as per your taste

1/4 tsp black Pepper or use as per your taste

To season the fries

0.5 tsp Chili Powder or use to your taste

0.5 tsp fine Salt

0.5 tsp Garlic Powder

0.5 tsp black Pepper

0.5 tsp Oregon

How to make:

Prepare all the ingredients above:

  1. Agria Potatoes or any Potatoes for frying, washed, peeled and cut into matchsticks about 800 grams. After cutting, keep them in cold water.

  2. Next boil 1.5 litres of water, to season, add in Salt, Sugar and Baking powder. Give it a light mix. The Potato sticks drain the water first and add in. Bring it to boil and cook it for about 4 minutes or until it's almost cooked over a medium flame, giving a light mix. After 4 minutes, remove them to the kitchen towel on a tray to dry and cool down easily.

  3. Meanwhile, make the seasoning. Into a little bowl, add in fine Salt, red Chili powder, Black pepper, Garlic powder and Oregano. Mix them well and set aside.

  4. To make the coating, in a tray, add in Cornstarch, red Chili powder and black pepper. Mix them very well. By this time the boiled Potato sticks are dried and cooling down. Drop them all in the coating powder. Make sure they are well coated by shaking the tray. Don't touch them with your hands so they don’t break. After the Potatoes are coated well, time to fry.

  5. Heat frying oil in a pan over a medium flame, check by dropping a piece of potato and if it's frying moving around that means the oil is heated well enough to fry. Drop in the boiled and coated potato sticks. If you are using a small frying pan then you can fry them in 2 batches. Now gently move them around to make sure they are covered by the oil and let it fry for about 5 to 6 minutes or until it changes to a light color, over a medium flame, adjust the heat if needed. Meanwhile, give a gentle mix to fry them evenly.

  6. After turning to a light and beautiful color, remove it and set aside for a second fry. The second fry makes the fries crispier. Let the same oil get hot on high flame and put in all the Potatoes.

  7. Fry them stirring gently to get an even color and not burn, should take about 1 to 2 minutes still on high heat. When the fries turn to a beautiful goldish color, transfer to a tray or large bowl and sprinkle the seasoning mixed that we made earlier as you like and mix well,

Finally the Crispy and Spicy fries are ready, serve as you wish with your preferable Sauces.
