SMOKED SALMON SALAD 🐠 🥗
Today I make a very colourful summer salad with very rich ingredients that we can enjoy as a main meal in summer season because it is quite fillinng. You wont want to stop eating the salad, it is sweet, sour, savery and has a tangi flavour. Enjoy!
Time for preparing 25 to 30 minutes
Serves 4 for main meal with bread or 6 as a side dish
200g Smoked Salmon thinly sliced
12 Quail Eggs boild and peeled
1/2 of Cucumber slices
150g Mini Cucumber slices
200g Tomato Cherries
1 Carrot slices in strips (optional)
150g Salad Lettuce chopped in strips
100g Rocket salad
Basil leaves for decoration
Fruits as you like
1 Mango ripe but not soft
4 tbsp Extra Virgin Olive Oil
2 tbsp Lime Juice (can add more if you want it more savery) or Vinegar
1&1/2 tbsp Dijon Mustard
1 tbsp Honey
1 tbsp Capers mincely chopped
1 tbsp chopped fresh Basil leaves
Salt and pepper at your taste
How to make
Prepare/clean all ingredients first then boild the Quail Eggs and peel and keep a side.
To make vinaigrette put all ingredients into a bottle and shake it to mix well then add salt and pepper at your taste and keep a side.
On the serving use a large tray/plate
Put the strips of salad lettuce and rocket, and add the strips of carrot on top.
In a bowl put the sliced mini & normal cucumber, tomato cherries and boild eggs then add half of vinaigrette, mix it well then add all mix on top of salad in the serving plate.
Add all fruits beautifully, add salmon on top of it then decorate with basil leaves.
Drizzle the remaining vinaigrette all over the salad. Now your salad ready to eat. enjoy!
