Prep & Cooking Time: 3 hours 30 minutes Serves: 8–10
Ingredients – Pulled Pork
1.5 kg pork shoulder
2 tbsp olive oil
1 large onion, sliced
1 tbsp garlic, minced
1 tsp ginger, minced
2 tsp cumin powder
2 tsp smoked paprika
1 tsp garam masala
1 tsp black pepper
½ cup tomato pulp
¼ cup soy sauce
¼ cup apple cider vinegar
¼ cup honey or brown sugar
1.5 cup chicken broth
Salt & pepper to taste
Method
Marinate the pork shoulder with salt, pepper, and a little olive oil. Let it rest for at least 30 minutes, or overnight for deeper flavor.
Heat a thick-bottomed pot, add olive oil, and sear the pork until browned on all sides. Remove and set aside.
In the same pot, sauté the onions, garlic, and ginger until golden.
Stir in cumin, smoked paprika, garam masala, and black pepper. Cook until fragrant.
Return the pork to the pot and coat it in the spices. Then add honey, soy sauce, apple cider vinegar, tomato paste, and chicken broth. Mix gently, bring to a boil, cover, reduce to low heat, and simmer for 2.5 to 3 hours until the pork is fall-apart tender. Flip the meat occasionally for even cooking.
Once tender, remove the pork from the pot. Let the sauce boil for 5 minutes on medium heat to thicken slightly.
Shred the pork with two forks, discarding the bone. Pour the thickened sauce over the meat and mix well until juicy and flavorful.
