Spicy Octopus


Octopus is one of those ingredients that are very hard to find in Nepal style, so I was very curious to know how it tastes with my Nepalese twist, and you know what?! Its simply delicious, the taste of the ocean with the intriguing flavors and aromas from the spices I’m so familiar with…. mmm so delicious, you must try! Enjoy!

Cooking time take 40 minutes

Serves 4 with side dishes

Ingredients

1 kg cleaned Octopus

1 medium Onion

Green Chilies to taste

2 medium Tomatoes

1 spring Onion

3 tbsp spring coriander

2 tbsp cooking Oil

1/3 tsp Chili powder optional

1/3 tsp Turmeric powder

1/3 tsp Garam masala

Salt to your taste

To tendaraise & aromatise the Octopus

1 medium Tomato sliced

half Onion

some stems of Spring Coriander

4 cloves Garlic

1inch Ginger

1/2 tsp Cumin seeds

1/2 tsp Coriander seeds

1 Cinnamon sticks

1 Star Anis

1/2 tsp Black Pepper

1 Black Cardamom

2 Cinnamon Leaves

1 tbsp cooking Oil

½ tsp sea Salt

For Masala

Red dried Chilies as per your taste

1/2 tsp black Pepper

1/2 tsp Cumin seeds

1 tsp Coriander seeds

6 cloves Garlic

1 inch Ginger

Whole Spices to infuse in Oil

1 Star Anis

Small sticks Cinnamon

4 Cloves

1 Black Cardamom

5 Crushed Green Cardamom

2 Cinnamon leaves

How to make

Prepare all the ingredients above

  1. To tendaraise & aromatise the Octopus, crush the 4 cloves Garlic, 1 inch Ginger, 1/2 tsp Cumin seeds, 1/2 tsp Coriander seeds, 1 Cinnamon sticks, 1 Star Anis, 1/2 tsp Black Pepper, 1 Black Cardamom and 2 Cinnamon Leaves and dry roast in medium heat for a 30 seconds into a wok or a pan. Add in 1 medium Tomato sliced, half Onion and some stems of Spring Coriander, dry roast 30 seconds too and add in 1 tbsp cooking oil, cook it around 1 minutes. Add in 1 and ½ liters water with ½ tsp salt and let it boil. After it boils put in the Octopus and lid on and let it cook 20 minutes on medium heat. After removing it and cool it down and cut it into your preferable size and keep it aside.

  2. Chop finely 1 medium Onion, Green Chilies to your taste, 2 medium Tomatoes, 1 spring Onion and 3 tbsp spring coriander

  3. For Masala, dry roast the red dried Chilies as per your taste, 1/2 tsp black Pepper, 1/2 tsp Cumin seeds, 1 tsp Coriander seeds, 6 cloves Garlic and 1inch Ginger for a minute on medium heat. After blending it with a 1/3 cup of water and set aside.

  4. Next heat a pan on medium heat and add in 2 tbsp cooking oil, after it gets slightly hot add in 1 Star Anis, Small sticks Cinnamon, 4 Cloves, 1 Black Cardamom, 5 Crushed Green Cardamom and 2 Cinnamon leaves and infuse it 30 seconds. Add in chopped Onion and green Chilies, fry it until soft and change the color slightly now add in 1/3 tsp Chili powder optional, 1/3 tsp Turmeric powder and 1/3 tsp Garam masala, combine them very well.

  5. Add in Blended Masala and cook it until separates the Oil in medium heat then joint it finely chopped tomatoes mix it, add in salt to your taste and cook it until it soft.

  6. Now add in all the chopped Octopus and combine it very well, add in 1 cup water combine them very well, lid on and cook it 5 minutes.

  7. Lid off and mix, add in spring Onion and Coriander, combine them very well and cook it 30 seconds then you are done. You can enjoy with rice, Roti.
