Yellow Beans Salad with Secret Dressing

Ingredients
For the Beans:
400g yellow beans
1.5 litres boiling water
1 tsp salt
Ice bath (cold water + ice cubes)
For the Secret Salad Dressing:
1 large clove of garlic (grated)
½ tsp chili flakes
¼ tsp salt
80ml extra virgin olive oil
40ml fresh lemon juice
Black pepper to taste
A handful of fresh coriander (finely chopped)
½ tsp smoked paprika
1 tbsp honey
1 tbsp balsamic vinegar
Let’s Get Started
Step 1: Make the Secret Salad Dressing We’ll begin by making our flavour-packed secret dressing. In a small jar add: 1 grated garlic clove, ½ tsp chili flakes, ¼ tsp salt, 80ml extra virgin olive oil, 40ml lemon juice, a few cracks of black pepper, a handful of freshly chopped coriander and ½ tsp smoked paprika.
Close the lid and give it a good shake until everything is well combined. Then taste — this is your chance to balance the flavours. Add 1 tbsp honey and 1 tbsp balsamic vinegar. Shake again for 2–3 minutes until silky and well blended. Set it aside to let the flavours develop while we prepare the beans.
Step 2: Prepare the Yellow Beans Rinse 400g of yellow beans thoroughly under cold water. Set aside.
Bring 1.5 litres of water to a rolling boil in a large pot. Add 1 tsp of salt.
Now drop the beans into the boiling water and give them a gentle stir. Boil for 4–5 minutes, or until they are tender but still crisp — we’re aiming for that perfect summer crunch!
While the beans are cooking, prepare an ice bath (a bowl filled with cold water and ice cubes). Once the beans are done, immediately transfer them into the ice bath to stop the cooking process and keep that vibrant color.
Let them cool completely, then drain and pat dry with a clean towel or kitchen paper. Trim both ends of the beans and they’re ready to go.
Step 3: Assemble the Salad Place the cooled and trimmed beans neatly on a serving plate. Give your dressing one final shake and drizzle it generously over the beans. Make sure every bean gets coated with that gorgeous, tangy, and aromatic sauce.
Garnish with fresh herbs — mint and coriander work beautifully for freshness and colour.
