Cooking time 10 to 15 minutes
Serves 2 to 3
Ingredients
400gr of fresh Spinach
2 medium size of tomatoes diced into small cubes
4 cloves of large Garlic sliced length wise
1 and half tsp of Ginger chopped in strips
2 tbsp of cooking Oil
2 dried Chillies
A few pinches of Salt or to your taste
How to make
Wash and clean the Spinach very well and put in the strainer to remove the excess water and prepare the rest of the ingredients above.
Put a Wok or Pan with the gas on high heat, wait until it gets hot, add 2 tbsp of oil, let oil to get hot.
Then break the chillies and put in, sliced Garlic and Ginger strips as well, keep a little bit to garnish in the end if you like, mix it well to infuse in the oil then when they get slightly brown. Add diced tomatoes, give it a good mix and cook for 1 to 2 minutes or until it gets soft.
After it gets soft add all Spinach, mix well to combine with tomato sauce. Then let it fry for 3 to 4 minutes or until all gets soft, meanwhile you can still stir a couple of times.
After a couple of minutes you can see water coming out from the Spinach. If you want more sauce then add a couple of tablespoons of water.
Finally add a few pinches of Salt to your taste. Stir well and let it fry for a minute or 2. Then we are done!
Transfer to a serving plate, garnish with Ginger Strips if you love Ginger and Enjoy!
