Stir fry Potatoes with Spring Onion 🥔🍃


Nepal is a country where we always still depend on seasonable fruits and vegetables. When I was young and my mother used to have season for the Potatoes and Spring onions in her farm she used to cook them for us, since then I love it. This is so easy side dish which has a very simple main ingredients the Potatoes and the spring onion. It’s a delicious side dish from a typical village in Nepal. I hope you give it a try.

Cooking time 25 to 30 minutes

Serves 4 as a side dish

Ingredients

500grs medium size of Russet potatoes

200grs fresh Spring Onion

1 medium size of Tomato sliced in thin wedges

4 whole dried Chili (use to your taste)

2 large cloves of Garlic Julian cut

½ inch Ginger Julian cut

Salt to your taste

Little bit of water optional, depend on how dry or saucy you want

2 tbsp Olive oil

¼ tsp Turmeric Powder

¼ tsp Cumin seeds, if you like the flavor, use it otherwise escape it.

How to make

Prepare all the ingredients above:

  1. First chop the Potatoes in 1 inch wide wedges and set aside.

  2. Cut the spring onion into 2 inch sizes and set aside.

  3. Heat the pan in medium flame. After the pan becomes hot, add 2 tbsp of olive oil, Wait to get hot.

  4. Next add the cumin seeds and let it infuse until it gets a brownish colour.

  5. Add in the chopped ginger and garlic and stir it and fry it for around 30 seconds or until it becomes light brown this helps increase the flavor.

  6. And add the potatoes, stir it a bit and let them be involved by the oil and cumin seeds

  7. Add in the turmeric and mix it with the potatoes very well then whole chilies and ½ tsp salt or to your taste. Stir everything to combine very well.

  8. Turn the heat to medium low and lid on and let it cook for around 15 to 18 minutes. Meanwhile check it and mix it gently a couple of times to cook evenly.

  9. In 15 minutes it looks like this, mix it gently again. Cover and cook it for 2 to 3 more minutes if it isn’t cook.

  10. After 2 minutes let’s take out the lid, check it out with a small knife to make sure. It doesn't have to be very soft because we still have to cook for a few minutes.

  11. Next keep heat to medium flame and add tomatoes, mix everything and put the lid on for 3 to 4 minutes, this will let the tomatoes to get soft

  12. Lid off after 3 minutes and stir it gently to not to break them, then add water, it helps to make it creamy, if you like dry version than escape it. Stir a bit more gently, it looks so good.

  13. Now it’s time to add in our fresh spring onions. Stir everything a bit, be gentle to not throw out anything and mix everything well. Now cover it with a lid to cook around 3 minutes.

  14. Take the lid off, you can see everything is cooked. Mix it lightly.

  15. And our Stir Fry Potatoes with Spring Onion is done!

  16. Garnish with fresh chilies optional but don’t escape the lemon juice and enjoy with Steamed Rice, Roti or as a snack
