I have roasted this Chicken with fragrant spices, the ones we use in our daily cooking in Nepal. First, I soaked overnight the whole chicken in an aromatic water then the next day before putting in the oven I’ve sprinkled the fragrant spices which makes the chicken so delicious and juicy! Cooking time in very well preheated oven 70 minutes after preparing the ingredients
Serves 6 with side dishes
Ingredients
1 whole Chicken (1½ kilo)
1 ½ liter Water
50ml Oil (I used Olive Oil)
½ tbsp Turmeric powder
1 ½ tbsp Red Chili powder or to your taste
½ tbsp Garam Masala
½ tbsp Roasted Coriander powder
1 tbsp crushed Black Pepper
Ingredients to soak in the water
5 cloves crushed Garlic
5 sliced of Ginger
3 Bay leaves
2 Star Anis
10 Green Cardamom
11 Cloves
A Cinnamon Stick
4 slices of Lemon
A hand full of Spring Coriander
3 tbsp Salt
How to make
Prepare all the ingredients above.
Remove the backbone from the Chicken. Make the chicken like butterfly and remove off the excess fat.
Clean & wash the chicken very well. After give a few cuts on the breast side of the Chicken, 1 inch deep.
Next into a big bowl put in water and add in Garlic, Ginger, Bay leaves, Star Anis, Green Cardamom, Cinnamon Stick, Cloves, Lemon, Spring Coriander and Salt, combine them very well until the Salt dissolves.
Now put the chicken in, make sure the Chicken is covered in the aromatic water.
Lid on and keep it in the fridge overnight.
The next day! Take the Chicken out from the fridge and remove the Chicken from the water and let it dry the water.
Make the mix of Oil and Turmeric powder.
Transfer the Chicken to baking tray and brush the mix very well all over on the Chicken.
Next sprinkle the dried powder spices Black Pepper, Coriander powder, Garam Masala and Chili powder evenly only a part of the Chicken (Chicken should be on breast side down), keep a bit to sprinkle on other side.
Put it in the 200 Celsius preheated (390 Fahrenheit) oven for 30 minutes.
After 30 minutes take it out from the oven and flip it over breast side up and sprinkle the spices again.
Then put it in the Oven 190 Celsius (370 Fahrenheit) for 40 minutes.
After 40 minutes take out from the oven and let it rest for 10 minutes.
Then you can enjoy this juicy and delicious roast Chicken with rice or other side dishes as you wish. Enjoy…
