Egg Curry



Today I’m making an easy and super delicious Egg Curry. This can be done as a side dish but for me most times it ends up being a main meal because of its amazing taste. I hope you enjoy this and share with your family a new curry recipe that will blow up their taste buds. Enjoy!


Cooking time 25 minutes

Serves 4


Ingredients

To prepare Eggs

8 boiled free range Eggs

¼ tsp Turmeric powder

¼ tsp Paprika

0.5 tbsp Oil


To make curry

1 tbsp Oil

½ tsp Cumin seeds

2 dried Chilies

2 Bay leaves

1 big Onion finely chopped

1 tbsp Ginger Garlic paste

0.5 tsp Coriander powder

0.5 tsp Garam Masala

1 tsp Madras Curry powder

1 tsp Paprika

¼ Red Chili powder

¼ Turmeric powder

2 medium Tomatoes finely chopped

1 tsp Salt

2 tbsp chopped green Coriander

1.5 cups (300ml) water


How to make:

First boil the eggs for 10 to 15 minutes to make them hard boiled.

Let them cool down in cold water then take the skin off.

As you can see the eggs are ready, now I’m going to add in Turmeric powder and Paprika, then marinate them evenly like this.


Next step

Heat a pan with 0.5 tbsp of oil on medium heat.

The oil is hot now, so I'm putting in all the eggs. Fry it, stirring evenly until the outer layer of the eggs turn slightly crispier. Takes about 1 to 2 minutes. We can see here it looks like this.


Now, heat a bigger pan on medium heat. Add in oil and cumin seeds, stir a bit to fry evenly and you can feel a fragrant smell. Now adding in dried chilies and bay leaves, fry them for 5 to 10 seconds.


Now Onion, cook it until it gets soft and slightly caramelized, it takes about 6 to 8 minutes. Ginger Garlic paste, cook it stirring for about 30 seconds.

Next, add in the dried spices, Coriander powder, Garam Masala, Curry powder, Paprika, Chili, and Tur meric powder. Fry for 10 seconds.


Now add the chopped tomatoes and Salt. The salt helps the tomato to cook faster. Cook it until the tomatoes are soft.


As you can see the tomatoes are soft, add in a cup of water, stir to see the consistency, the gravy seems too thick so I’m adding in 0.5 cup of water again. If you want more gravy then use a bit more water and adjust the salt. Combine it very well then let it boil for 2 minutes.


After 2 minutes, let's combine and add in all the fried eggs and chopped green coriander. Mix them evenly and let it cook for 2 minutes.


Everything is already cooked so there’s no need to cook for a long time.


Now our delicious Egg Curry is ready. Enjoy with Rice.
