Momos / Dumplings, everyone’s favourite dish in Nepal that's eaten as a snack in the afternoon. Nepalese Momo is unique because of the referencing spices that we use, dumplings become so fragrant and aromatic that no other dumplings can beat it.
In this recipe I make them from scratch and I show the complete process of making 3 types of beautiful looking dumplings and 3 easy ways to cook them. I hope you appreciate it.
Making & cooking time 1 hour & half
This recipe is for 35 to 40 medium size MoMos/dumplings
Ingredients
For the Dough
300g all-purpose flour
½ tsp Salt
1 tbsp Oil
1/2 cup or 110g warm Water (it depends, make sure the dough is soft enough not very soft or dry)
For the Stuffing
300g lean Pork minced meat with a bit of fat on it
1 tsp Garam Masala
½ tsp Turmeric
1 and 1/2 cups minced Onion
1 tbsp minced Ginger
1 and ½ tbsp minced Garlic
1 minced red fresh Chili
½ cup finely chopped spring Onion
1 cup chopped spring Coriander
2 tbsp Olive Oil
½ tsp Black pepper
1 tsp Salt or to your taste
To make & cook Momos
Some Oil
Some flour
Water to steam, boil and cook the MoMos
How to make:
First prepare all the ingredients required above
To make the dough, join all the ingredients for the dough on the ingredients list above and knead very well until it becomes solid. The dough should be not very soft or hard, just make it smooth. After you make the dough cover with a wet cloth or plate and set aside until you make the stuffing at least 30 minutes.
To make the Stuffing, mix all the ingredients for the stuffing above in a large bowl and combine them together very well and set aside.
To make the MoMos, knead the dough again very well with a bit of olive Oil on your hand. After, break in half, give it a long shape and separate it into 12g to 15g pieces, spread the flour on the surface of plate or chopping board and place them on.
Next take a piece of dough and with a dough roller flatten and give it a round shape and put the prepared stuffing in the middle then design the MoMos as you wish or like I do. I make 3 types, one is round and other 2 types have a long shape, please check on my video.
To cook in 3 ways
First Steam. Boil water in a steamer Pot, next apply oil in a steamer then place the MoMos inside and steam them for 12 minutes in medium high heat. When they look shiny and transparent it means they're cooked.
Second Boil. Boil the water in a pot and slide the MoMos slowly in and cook them for around 7 minutes in medium high heat and remove it gently with a slotted spatula and serve.
Third half fried (aka Kothey). Heat a pan, add in Oil and add in the MoMos flat side down and let them fry for around 1 minute or until its golden brown next turn back side down then let them fry around 25 seconds to look good and crispy. Next turn flat side down again and add in 1 cup water. After lid on immediately and cook it until the water dries or around 8 minutes in medium high heat. After remove from the pan and serve.
After all cooked, serve as you wish with the delicious Pickles that I made in my last video.
