Fried Tofu Curry on Bok Choy


350g Firm Tofu

250g Bok Choy

7 tbsp Oil

2 tbsp Ginger Garlic paste

250ml Water

4 tbsp Cornstarch to sprinkle on the Tofu

1.5 tsp Salt

1/2 tbsp Cornstarch plus 3 tbsp Water to mix

Chopped Chili, Spring Onion & Silver Ginger

To make Curry Sauce

1 tbsp Jaggery (Concentrated Cane Sugar)

3 tbsps Tamarind pulp (Titiri)

1/2 cup blended Tomato

2 tbsp blended Red Chili sauce

1.5 tbsp Curry powder

4 tbsp Water

How to make:

  1. Tofu covered with a cotton towel to reduce the excess water for 30 minutes.

  2. Let Bok Choy dry the excess water too.

  3. To make Curry Sauce in a bowl add in 1 tbsp Jaggery / Sakhar (Concentrated Cane Sugar), 3 tbsps Tamarind pulp (Titiri), 1/2 cup blended Tomato sauce, 2 tbsp blended Red Chili sauce, 1.5 tbsp Curry powder and 4 tbsp Water, combine them very well & set aside.

  4. After 30 minutes slice the Tofu into half inch wide pieces, sprinkle the cornstarch on the both sides of the Tofu.

  5. Next heat a large pan on medium low heat, 3 tbsp Oil, after the oil gets slightly hot, place in the Tofu pieces gently and fry them evenly on both sides until it looks golden in color and crispy on the outer layers takes around 8 minutes. Adjust the heat to low or medium if needed.

  6. Into a large pan, add in, 2 tbsp cooking Oil and 2 tbsp Ginger Garlic paste, keep on medium heat, stir it for 30 seconds then add in the Curry sauce. Stir it & cook it for 5 minutes or until you see sizeling the Oil.

  7. Add in the 250ml Water, stir it to mix evenly with the Curry sauce. After it starts to boil, stir & add in 1 tsp Salt, stir it again & add in the fried Tofu one by one. Cook it flipping over to absorb the sauce evenly for 2 minutes.

  8. Mix the 1/2 tbsp Cornstarch and 3 tbsp Water, mix it evenly & add it to the curry, mix lightly and cook it for 2 minutes. Finally sprinkle with chopped Chili & spring Onion and Set aside.

  9. Next, stir fry the Bok Choy, heat a pan on high heat, add in the 2 tbsp cooking Oil, let the Oil release the smoke then place in all Bok Choy. Stir it quickly, like push the raw one to the bottom and flip over the cooked one to the top or toss it a few times. Cook it for 2 minutes only. Finally add in the 1/2 tsp Salt, give a full mix & done.

Dish out like I did, first Bok Choy and on top Tofu Curry if you like and garnish with the spring Onion, red Chilies, Silver Ginger & enjoy!
