The Ultimate Chili Chicken



In this video I’m going to show you how to make a dry and spicy version of Chili Chicken, which is a really easy to make and comforting dish with an explosion of umami flavor, that can be for everyone's go to meal! Enjoy with fried Rice or noodles.


Cooking time 20 minutes after preparing everything

Serve 3 to 4


Ingredients

600 grams Boneless Chicken chopped in bite sized

600mls vegetable Oil to fry the Chicken


To marination the Chicken

2 tbsps Lemon juice or 1 tbsp cooking Wine

1 tsp Garlic powder or Onion powder

1 tsp Paprika powder

2 tbsps Soy sauce

1 tsp Red Chili powder

1 tsp Five spices

0.5 tsp Baking powder

1.5 tbsps Cornstarch

2 tbsps all purpose Flour

1 Egg

A few pinches of Salt to taste


To stir fry the dish

6 Cloves Garlic sliced

100 grams Onion chopped into bite sized

80 grams red Pepper chopped into bite sized

80 grams green Pepper chopped into bite sized

0.5 tsp crushed black Pepper

1.5 tbsps Soy Sauce

3 tbsps Tomato Ketchup

3 spring Onion

15 grams red dried Chilies

2 tbsps vegetable Oil

Salt to taste


How to make:

Prepare all the ingredients above.

  1. First marinate the bite sized chopped boneless Chicken, adding Salt, red Chili powder, Paprika, Five spices, Garlic powder, light Soya sauce, Lemon juice, Baking powder and 1 whole egg. Give a very good mix, until the meat coats with the spices evenly. After the meat is coated well add in cornstarch and all purpose flour. Mix them very well until the flour dissolves in and again the meat gets coated. Cover it and marinate for 15 to 30 minutes.

  2. After 30 minutes marinating, give a light mix again and fry. To fry, heat vegetable oil over a medium flame. Add in the Chicken pieces one by one. Do not overcrowd it. First couple of minutes let it fry without touching them so the meat coating doesn't fall off.

  3. After 2 to 3 minutes, fry it, turning them over. To cook the meat properly it takes around 8 to 10 minutes. Adjust the heat if needed. After it turns to a nice golden color, removed to a plate.

  4. To make it a crispy skin do a second fry. To fry the second time, the oil needs to be well heated so the heat should be around medium-high and wait until the oil gets hot properly. After the Oil is hot, add in all the fried meat and straight away start turning them over to not burn and to make it crispy evenly for 1 minute, if needed, adjust the heat. Remove to a plate.

  5. Heat a pan over a medium flame. Add in about 2 tbsps of vegetable Oil and sliced Garlic. Stir it for 20 seconds until the aroma releases. Now Onion, stir it for 30 seconds. Add in dried Chilies, stir and fry for 1 minute to infuse the aroma. Next , green and red Peppers, stir them and add in a pinch of salt and mix it well.

  6. Now, add in all the fried Chicken, soy sauce, black pepper and Ketchup to give the sweetness and to make the dish shiny, give a very good mix to combine everything well for about a minute. By this time the dish looks shiny and delicious.

  7. Add in spring Onion, give a good mix and the dish is ready.
