Tomato Rice


Busy day, if you do not want to cook big meal then this Quick Tomato Rice dish is for you. You can enjoy for lunch or dinner with Fish Patties or Fried Chicken or only Tomato rice. I cook Parboiled rice with tomato and aromatic spices, it cannot go wrong! The flavor is so good and taste’s amazing. Try them out. Enjoy!

Cooking time 25 minutes

Serves 4 or more depends

Ingredients

1 ½ cups (300) Parboiled Rice washed

1 cup finely chopped Tomato (big one)

3 tbsp Olive Oil

2 tbsp Tomato sauce

½ cup finely chopped Carrot

½ cup finely chopped Onion

3 cloves minced Garlic

1 tsp Chili flakes or to your taste

1 tsp salt or to your taste

Bay leaf

Spring Onion to garnish

4 to 5 cups of hot water (depends how liquidly you prefer)

How to Make:

Prepare all the ingredients above accordingly.

  1. Heat a pot with Olive Oil and add in the Carrot, Onion, Garlic, Chili flakes, Bay leaf, stir them gently and let it soften them.

  2. Next, Tomato sauce, put in, stir, and cook for 30 seconds then add in the chopped Tomato, combine, and cook it until it soft.

  3. Now add in the Rice, combine it well for around 30 seconds then add Salt, combine it again.

  4. Add in hot water about 4 to 5 cups, it depends on how liquidly you want if you want normal soft rice then to use only 3 cups.

  5. Stir it well, bring up to boil, lid on, lower the heat to minimum and let it cook around 15 minutes for the Parboiled rice. For soft rice like Basmati cook it only 10 to 12 minutes.

  6. After 15 minutes turn off the heat, check, lid back on again then let the rice to rest at least 5 minutes before serve.

Garnish with finely chopped Spring Onion and enjoy with your dry side dishes like I did with Fish Patties.
