Dahi Chiura with Spiced Mango, Nuts & Herb Ghee

ay, we're celebrating Asar 15 — Nepal's joyful Ropain Diwas, or National Rice Planting Day with a special twist on a beloved traditional dish: Dahi Chiura, or flattened rice with yogurt.
But this version isn’t just classic — it’s smooth, creamy, crunchy, refreshing, and beautifully aromatic... with spiced mango, toasted nuts, and fragrant mint ghee.
🥣 Ingredients:
1 cup flattened rice (Chiura)
1 cup natural yogurt
⅓ cup coconut milk
2 tablespoons honey
1 teaspoon vanilla extract
1 ripe mango
5 fresh mint leaves
1 tablespoon ghee
Garnish: dried fruits, toasted nuts and seeds (your choice), and a few mint leaves
👩🍳 Preparation:
First — let’s make the herb oil. Finely chop the mint leaves until minced. In a small pan, add 1 tablespoon ghee and the chopped mint. Warm gently until the ghee melts and the mint is infused with aroma. Transfer to a small bowl and set aside.
Next — prepare the mango. Peel, slice, and chop the mango however you like. Keep it ready.
Now — rinse the chiura. Place 1 cup of flattened rice in a fine strainer and rinse gently under cold water. Let it sit to drain and dry slightly.
Time to make the creamy base. In a large bowl, combine the yogurt, coconut milk, honey, and vanilla extract. Whisk until smooth and silky. Now add the rinsed chiura and stir gently to coat it fully in the yogurt mixture.
🍽️ To Serve:
Spoon the yogurt-chiura mixture onto a slightly deep, flat serving plate.Spread it out evenly. Top with sliced mango. Then sprinkle on your favorite toasted nuts, seeds, and dried fruits.
And finally — drizzle the warm herb ghee over the top. This step brings a beautiful aroma and depth of flavor. Garnish with a few fresh mint leaves for a refreshing finish.
